What My Family Ate Last Week (Wk 2)

My cooking schedule did not go exactly as planned this week.  I had forgotten that my husband was going to be away Thur-Sun to play in a hockey tournament with some of his friends (aka reliving their college glory days!!) so I postponed some of those meals until this week!

Monday AND Tuesday: (Leftovers and Taco Tuesday -> Leftovers x 2) We over-ordered wraps and sandwiches for our son’s 1st Birthday Party on Sunday and decided to have what was left rather than let it go to waste.  Eggplant and fresh mozzarella, chicken cutlets with roasted peppers, and Italian subs were only a few of what we got to eat!

Wednesday: (BBQ Brisket -> Salad) My son was not feeling well most of the morning and I completely forgot to start the BBQ Brisket (requires 6-8 hours to cook in the slow cooker), so I opted for a quick and easy salad option. I added tons of fresh veggies (cucumbers, broccoli, cauliflower, peppers, squash), threw in some cold cuts and cheese, and a little homemade guacamole!

Thursday: (Salad -> Tacos) My younger sister came over for dinner and we made Turkey Tacos.  Ingredients included mashed pinto beans, lean ground turkey, corn, lettuce, tomato, homemade guacamole, and onions.  DELISH!!

Friday: (Pasta Primavera -> My mom’s Homemade Pizza!)  My mom knew I was home alone with my son, so she offered to make her famous homemade pizza.  It is SERIOUSLY the best pizza I have ever eaten.  My sisters and I constantly tell her that we should open up a pizzeria / Italian restaurant for her since she has so many amazing recipes!  This isn’t the best shot (I didn’t have my camera with me) but it gives you an idea of how yummy it was!

Saturday: (Chicken Spezzatino -> Leftovers)  I felt terrible during my morning run (had to cut it short by 10 miles) and was not up to cooking dinner.  My son and I went over my mom’s again for dinner and had leftovers (even big girls need their moms when they are sick!)


Sunday: (Leftovers -> BBQ Beef Brisket)  I got this recipe from one of my favorite cookbooks – Williams-Sonoma, Essentials of Slow Cooking. Friday: Pasta alla Norma (one of my husband’s favorites!)
Saturday: Cauliflower Crusted Pizza (from Nicole’s Making Good Choices Blog!) – > can’t wait to try this!
Sunday: SuperBowl Sunday at my Mom’s (menu TBD)

    1. Isn’t it funny how having your husband away changes the entire way you cook? Mine travels a fair amount and even though my kids are big enough to make it worthwhile to continue cooking as I had planned, I just don’t. I go with quicker/easier when the hubs travels. Looks like you did pretty well, regardless!
